01 - In a large mixing bowl, add the Greek yogurt, fresh lemon juice, lemon zest, honey, vanilla extract, and a pinch of sea salt. Whisk thoroughly until the mixture is smooth and evenly blended.
02 - Gently fold in chopped fresh mint or mini white chocolate chips if desired, distributing them evenly throughout the mixture.
03 - Pour the mixture evenly into popsicle molds, tapping the molds lightly on the counter to release any trapped air bubbles. Insert popsicle sticks into the center of each mold.
04 - Place the filled molds in the freezer for a minimum of 4 hours, or until the popsicles are completely firm and set.
05 - To release the popsicles, briefly run the outside of each mold under warm water for a few seconds, then gently pull the popsicle upward by the stick. Serve immediately.
