Buttery brioche with cream cheese, mozzarella and juicy blueberries for a fast sweet-savory grilled sandwich.

# What You'll Need:

→ Bread & Spreads

01 - 4 slices brioche or country bread
02 - 2 tablespoons unsalted butter, softened

→ Cheese & Fillings

03 - 4 ounces cream cheese, softened
04 - 3.5 ounces shredded mozzarella cheese
05 - 2.8 ounces fresh blueberries
06 - 1 tablespoon honey or maple syrup
07 - Zest of 1/2 lemon (optional)

# Directions:

01 - In a small mixing bowl, gently combine blueberries with honey and lemon zest if desired.
02 - Evenly spread the softened cream cheese on one side of each bread slice.
03 - Sprinkle shredded mozzarella cheese over the cream cheese on half of the bread slices.
04 - Spoon the blueberry mixture over the mozzarella, distributing it evenly across the slices.
05 - Top with the remaining bread slices, cream cheese side facing down, to form closed sandwiches.
06 - Spread softened butter evenly on the outer sides of each sandwich.
07 - Heat a nonstick skillet over medium heat. Place sandwiches in the skillet and toast for 3 to 4 minutes per side, pressing gently, until bread is golden brown and cheese is melted.

# Expert Advice:

01 -
  • No one expects that first sweet pop of berry hidden inside melty cheese.
  • It's the sandwich I make when I want something that tastes like summer and comfort all at once.
02 -
  • If you rush the flip or the heat is too high, the cheese won't melt fully before the bread burns.
  • Lining the bread with cream cheese saves the day by stopping berry juice from making the bread soggy.
03 -
  • Softer butter means easier, more even coverage on bread, giving that gorgeous crust.
  • Don't press too firmly while grilling or you risk all the berries escaping out the sides.
