05 - 3 garlic cloves, minced
06 - 2 tbsp fresh parsley, chopped

09 - 1/2 tsp lemon zest

→ For Skewers & Garnish

10 - 8 wooden or metal skewers
11 - Lemon wedges, for serving

# Directions:

01 - If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
02 - Preheat the grill to medium-high heat (about 400°F).
03 - In a small saucepan over low heat, melt the butter. Add minced garlic and cook for 1 minute until fragrant. Remove from heat, stir in parsley, lemon zest, salt, and pepper.
04 - Thread zucchini rounds, bell pepper, and red onion alternately onto skewers.
05 - Brush skewers generously with half of the garlic butter.
06 - Place skewers on the grill. Cook 3–5 minutes per side, turning occasionally, until the vegetables are tender and charred in spots.
07 - Remove from grill and brush immediately with remaining garlic butter. Arrange on a serving platter with lemon wedges. Serve warm.

# Expert Advice:

01 -
  • The garlic butter creates this incredible sizzle sound that makes everyone gravitate toward the grill
  • You can prep everything ahead and just grill when guests arrive
  • They disappear faster than any other side dish I make
02 -
  • Do not thread the vegetables too tightly or they will not cook evenly
  • The final brushing of butter right off the grill is what makes these sing
  • Wooden skewers that catch fire are easily avoided with that 20 minute soak
03 -
  • Cut your zucchini at a slight angle instead of straight across it gives you more surface area for charring
  • Let the skewers rest for 2 minutes after grilling so the vegetables reabsorb some of those buttery juices
