01 - Set oven to 400°F for roasting.
02 - Peel beets with vegetable peeler and cut into 1-inch cubes.
03 - Place beet cubes on parchment-lined baking sheet.
04 - Drizzle with olive oil, sprinkle with salt and pepper, toss to coat evenly.
05 - Spread beets in single layer on baking sheet.
06 - Roast for 40–45 minutes, stirring halfway through, until tender and caramelized at edges.
07 - Drizzle with balsamic vinegar while warm and toss to coat.
08 - Serve warm or at room temperature.
