# Directions:

01 - Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add beef sausage slices and cook 3-4 minutes until browned. Remove sausage and set aside.
02 - Add remaining 1 tbsp olive oil to the skillet. Add sliced bell peppers and red onion. Sauté 4-5 minutes until vegetables begin to soften.
03 - Add minced garlic and cook 30 seconds until fragrant.
04 - Add cherry tomatoes and cook 2 minutes, stirring occasionally.
05 - Sprinkle shrimp with Cajun seasoning, smoked paprika, salt, and black pepper. Add to skillet and cook 2-3 minutes, stirring gently, until shrimp start to turn pink.
06 - Return browned sausage to skillet. Toss everything together and cook 2-3 minutes more until shrimp are cooked through and vegetables are tender-crisp.
07 - Remove from heat. Garnish with chopped parsley and serve immediately with lemon wedges on the side.
